You want a tripod that you can lock down, make it rock solid, so unless someone trips over it, it will not move. You also want it to have a good smooth movement through all motions, maybe fluid head. You may also need some of the stuff, or similar to what you find here – http://www.asimplelife.ca/boss.html as you are going to want to capture good audio. I do not know if the Canon camera you have has a Mic Jack. If it does, a mixer and a couple of wireless lavaliere mics and a M58 should do the trick. You would need a mixer to put it all together and a set of headphones so as to monitor the sound. If you have a MIc jack, route sound from the mixer to the camera. if no Mic jack, you need a digital audio recorder to route the signal to.
